Breakfast Quinoa

As I mentioned in my Cherry Coconut Oatmeal post, you can use any grain you want for breakfast porridge - including quinoa. People don't normally associate quinoa with breakfast, but it's actually a wonderful alternative to oats, and can really help mix up your breakfast routine. 

Quinoa is also a nutritional powerhouse. For starters, it contains all 9 essential amino acids, which makes it a complete protein. You can read more about quinoa in my May Newsletter.

Ingredients
1 cup cooked quinoa
1 cup almond or rice milk
1/4 cup chopped dried fruit, such as apricots, cherries or cranberries
Chopped nuts, such as almonds or walnuts
Drizzle of maple syrup or raw honey (optional)

Directions
Mix quinoa, almond or rice milk, and dried fruit in a small sauce pan. Bring to a boil over medium-high heat. Reduce heat to low and simmer for a minute or two. Transfer to a bowl and sprinkle with nuts and maple syrup or honey if desired.
